Fruit of the Gods! Summer Recipes and Ideas....


winding down....the school year...
gearing up on summer fruits!
Banana Kiwi Smoothie

Ingredients:

1 ½ frozen bananas
1 kiwi
½ cup vanilla yogurt
Splash of milk
Drizzle of honey
How to make it:

Blend and serve.
Garnish with a clementine  or orange slice.

there's one idea!    I love fruit. I shop in Asian markets. I try new things.
have you sampled Dragon Fruit yet? it's colorful and delicious.
sort of like a kiwi with bits of teeny edible seeds. I'm big on smoothies too.
I can make them for an on the go breakfast, lunch or dinner.
with the nice weather here - check out what's available near you - local markets, Amish markets have some cool things - if you have an Asian market they can have fantastic buys ( limes 10 for $1, Fuji apples .69/lb )

nope... not my butt

the only place i do topless is in the shower,
trying on bras, my gyn & having a mammo...
now...let's keep things light=
Fresh Mediterranean Shrimp and Avocado Pita Pockets
Serves 4
6 ounces low fat Greek Yogurt
1 ½ tablespoons lemon juice
½ tsp Dijon mustard
½ tablespoon balsamic vinegar
2 tablespoons basil, chopped
½ pound salad shrimp, rinsed and drained
½ cup green onion, sliced
1 small Roma tomato, chopped into small pieces
½ medium avocado, chopped in small pieces
¼ cup fat free feta cheese, crumbled
2 large whole wheat pita bread, sliced in half
1 cup baby spinach
1. Combine yogurt, lemon juice, Dijon mustard, balsamic vinegar and basil in a small bowl.
Season with salt and pepper to taste.
2. Combine shrimp, onion, tomato, avocado and feta cheese in a medium bowl and add dressing.
3. Warm pita bread in the microwave oven for 5 – 10 seconds. Remove and open one pita pocket and line with spinach. Stuff with 1/4 of the shrimp salad. Repeat for the remaining pita pockets.

Shrimp is low in fat, and higher in cholesterol. Studies show that it can raise HDL and triglyceride levels, good for heart health. It also contains B12, omega-3 fatty acids for anti-inflammatory effects,
and selenium, copper and zinc.

Asian Noodle Toss

Ingredients
• 8 ounces uncooked thin spaghetti
• 1 (10 ounce) package julienned carrots
• 8 ounces sugar snap peas
• 2 cups cubed, cooked chicken (or shrimp_
• 1 (11 ounce) can mandarin oranges, drained
• 1/2 cup stir-fry sauce



Directions:
Cook spaghetti according to package directions. Stir in carrots and peas; cook 1 minute longer. Drain; place in a bowl. Add the chicken, oranges and stir-fry sauce; toss to coat.
 Avocado Mandarin Tossed Salad

Crunchy toasted pecans and slices of creamy avocado add to the variety of textures and tastes in this interesting mixture. The salad is a lovely complement to a pork roast! Pat Stevens, Granbury, Texas

Ingredients:


• 1 (11 ounce) can mandarin oranges, drained
• 1/2 cup thinly sliced green onions
• 1/3 cup chopped pecans, toasted
• 1/8 teaspoon pepper
• 4 cups torn salad greens
• 1 medium ripe avocado, peeled and sliced
• 1/4 cup prepared Italian salad dressing


Directions:
1. In a bowl, combine the oranges, onions, pecans and pepper; refrigerate for 30 minutes. Just before serving, place the greens place the greens in a salad bowl; top with orange mixture and avocado slices. Drizzle with dressing.
