A Chick Trying To Keep Toasty!

bleh!
i know i say it over and over but with snow coming our way mid week... i do not like winter... bleh! if it snows a lot they'll call a "snow day" and I won't have to go in to work since I work in a high school health room = that's cool.

 i just saw a whole slew of baby chicks and ducks at a farm store this weekend and they were so sweet! all yellow and fluffy, peeping like mad. clustered together with children looking in the pens so enthralled at these babies. so was i.
they were much sweeter than these pictures!
then i've been looking for different ideas for a friend of mine for things to make with peeps...

i don't eat anything marshmallow...
but i thought this was very cool!
i'll be in the hospital/rehab during Easter break but i can do without the candy anyway.
and the true meaning of Easter is what it's all about for me. you might not see very many posts for a while...but i'll be thinking good thoughts. hugs, jennifer

Here's The Scoop!

if you were a dessert
what kind of plate would you want to be on and what would you be?

Ice Cream Sandwich Cake
YIELD: Makes 6 servings


Ingredients: 1 cup heavy cream 2 tablespoons confectioners' sugar 6 ice cream sandwiches (3.5 ounces each) 2 1.5-ounce candy bars or 1/2 cup chocolate chips, chopped

Line an 8 1/2-by-4 1/2-inch loaf pan with a piece of wax paper or parchment, allowing the paper to hang over both long sides.

In a large bowl, beat the cream and sugar until stiff peaks form.

In the bottom of the pan, arrange 3 of the sandwiches in a single layer, cutting them to fit as necessary. Spread with half the whipped cream. Repeat with the remaining sandwiches and whipped cream.

Sprinkle the top of the cake with the chopped candy bar. Cover with plastic wrap and freeze until firm, at least 1 hour and up to 1 week.

Holding both sides of the paper overhang, lift the cake out of the pan and transfer to a platter. Discard the paper, slice the cake, and serve.

Our Summer Side Dish was a Big SPLASH! BUNCO anyone?


Summer Shore Beerita Drink Recipe

Glass to Use Beer Mug 
Drink Colour: Golden
Ingredients
•4 bottles (light) Beer (Corona)
•7 oz. Tequila, gold
•1 can Frozen Limeade Concentrate (Minute Maid)
Mixing Instructions
In a pitcher, combine the limeade concentrate, tequila, and beer. Stir ingredients completely. Add ice cubes as desired and serve immediately, garnished with lime slices. Makes 4 to 6 drinks.

Serve with one of these on and it's a Blast....Great for BUNCO!

Here's the deal! Snickers are my fav!

Lance Armstrong said so...










Snickers candy bars are my fav! I don't keep them in the house, I don't keep them in my desk, my car or my purse. Every now and then the high school PTA will place mini treats in my mail cubby and although I give away all the other candy in the bags ... Snickers is my FAV! So, I did a little research...
Nutrition Facts:
1 2oz. bar
calories : 266
total fat: 11 grams
Cholesterol: 8 mg.
Sodium: 130 mg.
Carbohydrates: 37 grams
Protein: 5 grams
I especially love them frozen - not the ice cream bars but the candy bars. I eat them carefully to avoid gianormous dental bills.
But the minis are 45 calories each ( on the Livestrong site - Lance Armstrong ). That I can handle and I can eat just 1 once in a while. Once in a blue moon.
Here are a list of some other 50 calorie treats:
  1. 5 York Peppermint Patty bites
  2. 5 Werther's original sugar-free candies
  3. 2 rolls of Smarties
  4. two bite-size Three Musketeers bars
  5. one fun-sized box of Junior Mints
  6. 1/2 a dozen mini marshmallows
