Zest For Recipes With A Twist!


while thinking about country cottages, round cobbled stones, rustic gardens, crusty bread and recipes with fresh herbs and greens.... I decided to write one of the salad recipes I've been having for lunch the last few days at school

Lemon Tarragon Blueberry Spinach Salad
1 bag baby spinach or mixed field greens
1/2 cup of blueberries
1/4 cup of chopped walnuts
1/4 cup of bleu cheese or goat cheese crumbled
Brianna's Lemon Tarragon Dressing to taste

or 
 1 teaspoon grated lemon zest
1/ teaspoon salt
1/2 teaspoon minced fresh tarragon
1/4 cup freshly squeezed lemon juice
1/2 cup extra-virgin olive oil
green
yellow
blue
angelic ingredients for a salad
what do you think? jennifer

substitute
strawberries
chopped toasted pecans
and your favorite creamy Balsamic
Vinaigrette
this was lunch today! yummo!

Thoughts For Thursday - Spring Recipe: Tres Leche Cake Fresh Strawberries!

MY VERSION OF TRES LECHE CAKE!














Ingredients

1 yellow cake mix (with pudding) baked as directed in 13 by 9-inch pan
For topping mixture:
1 can evaporated milk
1 can sweetened condensed milk
1 pint heavy whipping cream
1/2 cup rum (or to taste)
To finish:
Whipped cream, to cover cake ( or Cool Whip)
5 ounces sweetened coconut
Directions
Poke holes in the cake with a fork all over.
Pour topping mixture over cake.
Let mixture absorb completely in refrigerator.
Cover with whipped cream or cool whip and
sprinkle sweetened coconut over top of cake.
OPTIONAL: I love putting little bowls of fresh strawberries,
blueberries, pineapple and chopped macadamia nuts around the cake

SERVE INDOORS, OUTDOORS WITH THE VERY BEST OF FAMILY OR FRIENDS!

Calling All Strawberries!

Strawberry Shortcake a la Jennifer:
ok - it's last minute on a Sunday - 2 people are coming ( I know just my son
and his girlfriend) - then it's my friend Bobbie ( just a chef) then my other son and his girlfriend. I'm tired, I've shopped, I haven't cleaned, laundry up the giggie. My husband is frying a turkey. Ravy (my son's Cambodian girlfriend is making Papaya salad, Taro Mousse, and Jasmine rice), Bobbie is bringing hot wings and lemon cake and a sympathy card for losing our foster gem Taco (see last post), my other son and his girlfriend give the gift of being on time (shut up Mom). I made artichoke, tomato dip for baguette and crudites. We have vegetarians, red meat eaters, white meat eaters, Asian eaters, vast eaters.
ANY WHO - here's what I did... I took a Duncan Hines yellow cake package and baked it in a 9 x 13 pan according to directions. While it cooled I poked it with a toothpick. I then poured a can of condensed milk on it and let it cool. When cooled, I spread Cool Whip topping on the top, then sliced fresh strawberries and covered it with foil. Put it in the refrig. Leftoverers - ZIP! I think my husband had the last piece for breakfast.
