Devilish Thoughts!

Fried Deviled Eggs

Ingredients:



1 dozen eggs
1/4 cup mayonnaise
1 tablespoon Dijon mustard
1 teaspoon fresh lemon zest
1 tablespoon chopped chives
Dash hot sauce
Salt and freshly ground black pepper
1 cup all-purpose flour
2 eggs, beaten
1 cup panko crumbs
Parsley, for garnish

Peanut oil, for frying


  • Directions:
    Add the eggs to a large saucepan filled with cold water. Bring to a boil. Remove from heat and let sit in the water for 14 minutes.
  • Peel the eggs and slice lengthwise. Remove the yolks to a bowl. Add the mayonnaise, Dijon, lemon zest, chives, hot sauce and salt and pepper. Mash the yolks together with a wooden spoon. Taste and adjust seasonings, if needed. Fill the egg yolk mixture into the egg whites.
  • Heat oil in a deep-fryer to 350 degrees F.
  • In a medium bowl, add 1 cup of flour and season with salt and pepper. In another bowl, beat the eggs, in a third bowl, add 1 cup of panko.
  • Dip the eggs into the flour, then the egg and finally into the panko. Gently put the eggs into the hot oil. Fry until golden brown. Remove to a paper towel lined sheet tray. Season with salt and pepper and garnish with parsley.

i was having a tough time yesterday

needed to feel Spring and hope
to hear words of encouragement
get a boost
look at your lovely blogs
you right there for me
you were right there for ME!

then i received an email from my union rep telling me we are all losing an hour a day on our jobs due to the economy - not more money - less money
i fret... my phone rings

my friend bev says - "i read the email trust in the LORD,
open your bible to Psalms 46:1,2"
i did - it said - i knew
"God is our refuge and our strength, a very present help in trouble. Therefore will not fear, though the Earth be removed, and though mountains be carried into the midst of the sea."

Thursday Decorating Pick Me Up!!! Dollar Store Design!

melting snow is yucky! oil, gravel, salt. my dogs are tracking in mud....ewww. my car needs a good washing, only to be sprayed on again...I work in a high school health room where kids are chomping at the bit to be outdoors again....
so
cheering up was needed!
to the dollar store i went!

i bought beach pails
in bright primary colors

perky parasols!
flip flops in rainbow colors!
and...
I went wild and decorated
the HEALTH ROOM!!!
flip flops hanging on door handles and from the ceiling, beach pails to put private personal girl things in in the bathrooms, parasols on various surfaces, flowers here and there.....

K is for KARL - OKAY?

My friend Karl is cool. He is 7. He wanted to have his own business. Something he could do. So his parents Marty and Gretchen discussed the possibilities with him when he was 5 and they came up with an egg business. It worked - and so has Karl. In fact Karl has managed to acquire quite a few savings bonds with the earnings from his egg business. I chicken sit when they are on vacation. Karl also saves feathers for my card making business. He is a hard working guy and I am very proud of him. His job description includes: feeding and watering his feathered friends, gathering and cleaning the eggs, putting them in cartons and marking the date, refrigerating them, keeping track of orders, noting his sales and money. I buy these orange yolked yummies as often as I can and they are delish - $2.00 a dozen and well worth it. They are also organic and brown. Along with this entrepreneurship, Karl assists his father with his beekeeping business and has done so since the age of 3. Their label - what else "Buck Naked Farm".
