Dare To Be Different! Just Dance!

You know the expression "dare to be different"?

Well, I believe it's a great motto. But I learn new things

almost every day. Working in a high school can be wonderful and challenging.

I see students that dress the same and think they look unique, students that look very

different in their own style. We have many cultures and customs.

Then there are the clients from my part- time job ...

my "peeps". They are high functioning mentally challenged individuals

that I help with their daily life skills. They are all one of a kind.

They are usually happy to see me. Happy about most days.

Love to share stories.

"Dancing like no one is watching" was written for them.

We attend free concerts by the lake near their apartments

every Friday and Saturday evening in the summer...

about 7 to 10 of us, clients and aids.

The band starts up and my peeps go right up front and say "hello".

They know a lot of the performers by name.

And when the music plays - boy, do they swing!

They swish and sway, jump, bounce, smile, laugh and it's their world.

They know the words to all the current songs and sing out loud and with enthusiasm!

"Perfect" by Pink is a favorite.

I smile too.

So do the people in the audience.

You see it's abandon, it's joy, it's pure fun like no other.

I look, I learn, I love.

They inspire me.

So I thought about a lot of people and things that are different today.

I work in - the Health Room is quiet

getting lots of things done...

Mom's Memories... Joy in my heart!

No Hallmark card or store bought floral arrangement

can replace the memories I have of my sons

when they were growing up.

I just shake my head sometimes.

More sutures on both of them than a baseball.

So many trips to the ER,

my dad was going to give us a

gift certificate!

Sleepovers....

I'm told now that it's better

I don't know what went on.

Hmmm

A Mother's Day when

a cheese omelet

was attempted to be

made in my waffle iron.

We won't go into detail about the

time one of them pooped

in a display toilet in a department store.

Or who sold all the

Christmas cookies I had baked

to his classmates two weeks before

Christmas, leaving me with empty tins!

Their great-grandmother said

"get those boys baptised!"

and I said "I did!"...

which she replied -

"well do it Again!"

Every year they would

attend a church fair and rummage

sale with their grandparents.

One year they bought me a little

jewelry box and a bunch of vintage brooches.

I wish you could have witnessed

the pride on their faces when I

wore every one of those pins to church

the next day...of course you couldn't see the joy in my heart but it was there too.

I Had A Dream Last Night...

I had a dream last night. First let me begin by saying

that without my GPS I am directionally challenged.

LOST

And it's broken.

So this dream was about being lost.

In a storm.

Going up and down roads.

Raining cats and dogs.

Up and down streets.

Can't find my way.

I end up by the ocean.

I love the ocean and the beach.

It's gray, dreary, cloudy.

I'm lost.

Windshield wipers going.

Hundreds of ducks everywhere.

mmmm hmmmmm

quacking

Then I see a man scoop up a handful.

In my mind I think - these poor babies need help!

I pull my car around the corner where the water isn't as deep

in the road and I open the door of my car...

in pile the ducks...

every shape, size and color.

Now I have ducks on the floor, the seats, my lap,

all staring at me totally silent.

The storm stops suddenly.

No rain.

No wind.

Just ducks...in my car.

Silence.

They're staring at me.

The duck on my lap looks me in the eye.

and I hear
Grrrrrrrrr!

And I waked myself up!

For The Birds!

I have always loved birds. In fact when my children were younger we had our share of birds - a couple of parakeets, a cockatiel and 3 zebra finches. They were all healthy, messy and we managed to keep them away from our dog and cat. 1 parakeet didn't survive a realtor leaving our study door open during a showing. The zebra finches...well, my son fed them dried grits...water and the rest is a sad,sad story.

I've always collected bird houses and bird cages - both indoors and out. This year because I share a townhouse I haven't purchased anything for the yard. I'll wait until I have my own surroundings to personalise.

So this year when my daughter in laws parents moved in with them from Cambodia - I was struggling with ideas for Christmas. Warm clothes for their daily walks were number 1. They speak very little English so what to do? Ravy's mom sews in their kitchen and her dad spends a lot of time watching her. They have big sliding glass doors in front of the two sewing machines. So...

I bought them a bird feeder, bird seed and they can bird watch to their hearts delight!

Have Yourself A Merry Everything! Part two.... There for each other

It's been a busy time for me...but then isn't that the way this season is?

And it's over in what seems like a minute! All the preparation, wrapping, shopping,

cards, visits, lists, shipping, baking, cooking - POOF!

Big trash bags of garbage ready to go out filled with balled up wrapping paper and loads of tissue paper. Stacks of washed dishes for meals that were made with love and memory filled. Coffee ready, pies laid out on the table, kids playing with their new toys.

My family holiday is a little different but different can be totally cool too!

My son Matt and his girlfriend Connie are on vacation in Thailand . They've taught kindergarten in a private school in Korea for two years and are finally coming home in Feb.. My older son Todd and his wife Ravy live in Annapolis. Her parents, from Cambodia, just moved here too. My parents are in Florida. Cousins at the Jersey shore.

And so with that said I'd like to explain my thought on the above.

I've been home for weeks because of knee surgery and it is not my style not to be busy!

So I've had to continue to come up with ideas on a limited budget to keep the holiday roll going along! Yesterday was a perfect day! Just can't explain it - it was a high energy day from start to finish and not about me. It was about the pleasure you get from others. I've read other bloggers and they have such caring, creative ideas on how to touch someone else's life. I took tips and made up some of my own. It takes a village after all right?

A co-worker is having financial probs and this is not the time of year to have to worry even more about every day household supplies plus making Christmas nice with two children so I made a trip to ... yes! the Dollar Tree

Then I made goody tins for the animal shelter ...

they need donations all year long!

and my friends were gifted with mini containers
for their critters!

I found pretty loaf pans for $1 each at
Michael's and bought dessert bread mixes -
wrap them up in a pretty bag for my friends with kids =
a family snowy day baking project is born!

I found these little guys and bought plastic gift bags at the dollar store...
packed them up in a bigger Christmas bag and off they went to a local shelter for the kids.

Pumpkin Spice Granola

Directions

In a large bowl, combine the oats, coconut, pecans, almonds and sunflower kernels; set aside. In a small saucepan, combine the oil, honey, water, pumpkin pie spice and salt. Cook and stir over medium heat for 2-3 minutes or until heated through. Remove from the heat; stir in extract. Pour over oat mixture and toss to coat.
Transfer to two greased 15-in. x 10-in. x 1-in. baking pans. Bake at 300° for 45-50 minutes or until golden brown, stirring every 15 minutes. Cool on wire racks. Store in an airtight container. Yield: 13 cups.

Some years I don't have the time I'd like or the energy, imagination and heaven knows the extra cash. I work two jobs so I know how tough this economy is. I hope I don't sound as if I'm preaching to do, and do and do. But I've seen what faith can do. I've witnessed little things bring joy to someone's life. So today and yes, several days lately... I had joy and some fun ideas ... a little extra cash and I went for it. Maybe tomorrow I won't be able to buy a bag of dog for for the shelter but I know I can make some of my cards to donate to our local hospice center and all it took was supplies I already have and my time.

So why did I have the best day...I'll tell you sometime...

Busy As a Bee....Some Angels For You!

I'm doing swimmingly well..

My knee surgery went extremely well! So while I'm on leave recovering, I wanted to have a day to work on card orders, sit and organize, wrap, organize more....not easy when you're not easy when you're supposed to Take It Easy! But as I rested it took not of angels on line and wanted to share some of the beauty and various styles with you.

Waiting For Christmas... Gift Ideas For Furries Too!

As the holidays rush toward us...I'm busy thinking about all the bits and pieces of things I want to get done on my list because to me - it's fun to do little bits and pieces! I'm home recovering from knee surgery, doing better than I ever anticipated - and I plan to use this time well!
First Project: Furry Buddies

I pick up cookie tins throughout the year at yard sales
I look for pretty glass containers, lidded jars, canning jars, wine glasses
pretty scraps of fabric, rope, ribbon
bells, ornaments, glitz, costume jewelry

Next... Dog Biscuits
I pick up dog biscuits at Walmart in several shapes and sizes - large bags. Then I separate them into appropriate size for my friends critters, place them in cool containers, decorate them, label them and they are ready for Santa giving. For petite dogs I have found teeny biscuits that look just like MilkBones that are adorable at Farm and Home Tractor Supply.

They look great wrapped in a little cellophane gift bag tied with a bow and a jingle bell given in a Christmas mug, a wine or champagne glass! You can also put them in a lidded canning jar with a pretty piece of fabric on the top of the lid. If you make bigger jars.... Pier I has Asian white ceramic soup spoons that make dynamite scoops to tie on the jars. They are .75 each!

Like the ideas so far?
That's why I do believe in thrift stores, yard sales, estate sales, friend swaps, saving 1 glass out of broken sets. You can even use 1 pretty dessert plate with a cloth napkin that has a holiday look - that's why I haunt the CLEARANCE aisles of ROSS, Marshall's, TJ Max, Home Goods.

Here you go....coffee mug - NEW .50 Home Goods

Champagne Glass Goodwill .10 each bought 6 Great for a mini dog biscuit gift for a neighbor or going to a friend's Christmas party. Everybody should celebrate!

Line a basket with a cloth napkin, tissue paper - I pick them up at yard sales all the time! Big bow and you're good to give! Dog toy attached - even better!
Anyone need a new dog bowl?

Make a delivery to your local pet shelter... they can use every donation avalable!

If I ever fall in love again...I'll appreciate all the secret moments that are in a relationship.

That excitement when he walks in the door, he comes home from work.

Even shaving can seem sensual when a woman is is love.

It's the hand holding, the look, the caress. The warmth you share.

Humor that sometimes only the two of you get.

Being yourself, but it is oh so much better when you are together. Individuality. Yet, loving that you are loved. That deep rich feeling that almost cannot be put into words.

It's breakfast in bed, and saying "goodnight", holding me when I'm sad,

being there for you when you're lost, keeping warm, sleeping in.

The warmth and caress as we embrace and say "I love you." and mean it so very much.

Oh, I know it won't be perfect. But I miss the mystery rides in the country,

driving along the coast, watching the Christmas tree glow, candles in the bedroom,

a card for no reason, baking you something just because it's Tuesday, saying "Happy

Thursday, I Love You". I do still believe in love. I see it all around. My best friend and her husband. My friend and her fairly new husband. My cousins about to be Mr. and Mrs. My son and his wife about to have an anniversary.

I've seen dolphins leaping in the distance as I sat on the shore.

I've had the thrill of witnessing several glorious rainbows.

I've loved and lost and loved again.

The births of both of my sons was wondrous by far.

And I do believe in falling in love and happy endings.

Feathers make me think of friends I've lost, little blessings

and make me smile. They have this ethereal nature that seems to connect me to many ideas. Because of this, I've decided to use them as my Thanksgiving theme for this year.

So here I'll begin my thoughts

on gratefulness journal...

Hospice and their caregivers

prayers for our troops and their families

caring for our elderly
helping the homeless
church

loving an old one

loving my job

to stop, listen and care

It might sound very simple to you when I list what I view as my blessings.

This last year has been a rough road in many ways. I've learned a lot,

adjusted a lot, moved twice, had health issues, began a new job, made friends,

become closer to God, read many a book, seen new places... learned who truly cares, who always has,

have become a better friend and Mom, realized I make mistakes and always will, have learned meditation and prayer, listening is very powerful and I am a novice at it. My sons are wise and I have a great deal to learn from them. God is always holding me in HIS hands. I have dear friends that ride their roller coasters and mine. I have a huge sense of humor. It's OK to cry. Everyone has a story to tell, a gift of themselves to share. I am so very thankful for this Life. Jenn

yep....this is it!

knee surgery on 11/30

and I am NOT a stay at home girl! So I am making plans on what will occupy my time for at least 2 weeks away from my job in the Health Room at school and then light duty when I return. You see I won't be allowed to run with a wheelchair, perform CPR, blah, blah, blah. I know I've told you I love my job...so this is a set back but only temporary.

I've never had any kind of bone or joint repairs. Lucky. Blessed. Tonsils and Adenoids, 2 C- sections, Hysterectomy, 1 Kidney removed but this is more intimidating because it might keep me down! So I've planned ahead...(if pain isn't involved of course, lol) to make cards for Christmas, to donate to local places for fundraisers, to learn some simple beading techniques, watch a few dvds I have wanted to see, and not gain 89 lbs.!!!

so a pedicure is a priority while I can bend my knee

crafts have been purchased at Michael's (with many a coupon I might add)

I've made a list of dvds I would like to see (some I've seen but that never bothers me)

my Kindle is loaded

I'm ready to be as good as new.
If any of you know of someone in the military that would like to have cards sent to them,

it would be an honor to make cards and personalize them for someone special.

Songs of Life

Abundance is not something we acquire. It is something we tune into.

I was driving home from my evening job last night listening to the radio - I don't know how many of you listen to "Delilah" but she plays songs for people that make requests, are up are down,are thankful. And she was talking to a woman about her life, her wishes, wants and fears. What hit close to home for me was one phrase " God Gratefulness". Taking time out to remember to be grateful for what we have in our lives. I so often forget to do that. Not that I don't attempt to - but then something will occur that brings me round to God, His spirit, His word, the joys of life, the simples pleasure of a brief instant. On my way to my second job last night there was a serious accident. Fire trucks, 2 ambulances, police cars. As I sat there I prayed for the people involved hoping that they were not injured. People were cutting in, hitting their hands on their steering wheels, beeping their horns, on their cell phones. Pissed, angry, frustrated. God gives me this overall calmness when I need it. When I had my kidney removed. With my upcoming knee surgery. I had started to fret - thinking 'I've never had a bone or joint or tendon repair', on and on with things I could worry about. Then I centered myself. A brief reminder on the radio and I was good to go.

You see God always sees to our needs. I just smiled and let it go. Because I listened to someone speak of having a gratefulness to God for little things that happen in my life and then I realized how very much HE loves me and guides me through my struggles and pleasures. HE loves you too - just go to HIM.
A side note...whatever you believe...trust in that faith, in the place, in that holiness - be it SHE, Buddha, the spirit within you.

Party Planning Post Op!!!!

Pomegranate Jello Shots

Glass: 2oz plastic shots or small paper cups - Glass shots look better but are harder to drink from, paper or plastic can be folded into the mouth... I like to serve them in Champagne Glasses

Step 1: Boil the water
Step 2: Slowly add JELL-O while stirring until it dissolves
Step 3: Add cold water and let the jello cool down for 5 minutes
Step 4: Add vodka and stir
Step 5: Pour into shots
Step 6: Put a cranberry piece in each shot (optional)
Step 7: Put shots in freezer

Step 8: Get the party started!
You can also use:

Squeeze a lime in the mixture for that special flavor that only the lime can give. Arils are new and fun!

then on light duty for several more weeks and I plan to have one hell of a party

when I'm back on my feet!

Stuffed Portobellos with Greens

Ingredients:
Grilled Portobello Mushrooms:

4 medium portobello mushrooms
1/4 cup olive oil

1/4 cup balsamic vinegar

2 cloves garlic, minced

1 shallot, minced

1/2 teaspoon each of basil, Italian parsley, rosemary and thyme, chopped

salt and pepper to taste

Herb Sonoma Goat Cheese

1/2 teaspoon each of basil, Italian parsley, rosemary and thyme, chopped

1/4 lb. Sonoma goat cheese

1 tablespoon creme fraiche

1 tablespoon cream cheese

POM Mustard Vinaigrette:

Juice from 1 large POM Wonderful Pomegranates*, or 1/2 cup POM Wonderful 100% Pomegranate Juice

1/4 cup rice vinegar

1-1/2 tablespoons mustard

3/4 cup olive oil

salt and pepper to taste
Salad:
2 cups California baby greens

Garnish:

1/4 cup arils from 1 large POM Wonderful Pomegranates** or POM POMS fresh pomegranate arils

Preparation:

Grilled Portobello Mushrooms:

Combine 1/4 cup of the olive oil, balsamic vinegar, 1 tablespoon minced garlic, half of the minced shallots and 1/2 teaspoon of each of the herbs in a bowl. Remove stems from mushroom caps and marinate in herbed oil and vinegar mixture for 30 minutes to one hour. Remove portobello from marinade and season with salt and pepper. Grill each side for approximately 2 minutes or until tender.

Herb Sonoma Goat Cheese:

Preheat oven to 425 F. Combine remaining herbs, garlic, goat cheese, creme fraiche and cream cheese. Spoon mixture onto cookie sheet in 2-1/2 to 3 ounce dollops. Place cheese in preheated oven and bake for 5 to 7 minutes or until soft. Remove from cookie sheet and place into center of serving plate.

POM Mustard Vinaigrette:
Prepare fresh pomegranate juice.* Combine the pomegranate juice, rice vinegar and mustard in a large bowl. Slowly whisk in oil to emulsify. Season with salt and pepper.

Baby Greens Salad and Plating:

Add remaining shallots in equal portions to the baby greens and toss with vinaigrette. Place mushroom on top of cheese with a small portion of the salad.

Notes:

* For 1 cup of juice, cut 2 to 3 large POM Wonderful Pomegranates in half and juice them with a citrus reamer or juicer. Pour the mixture through a cheesecloth-lined strainer or sieve. Set the juice aside. ** Score 1 fresh pomegranate and place in a bowl of water. Break open the pomegranate under water to free the arils (seed sacs). The arils will sink to the bottom of the bowl and the membrane will float to the top. Sieve and put the arils in a separate bowl. Reserve 1/4 cup of the arils from fruit and set aside. (Refrigerate or freeze remaining arils for another use.)

Fried Deviled Eggs

Ingredients:

1 dozen eggs
1/4 cup mayonnaise
1 tablespoon Dijon mustard
1 teaspoon fresh lemon zest
1 tablespoon chopped chives
Dash hot sauce
Salt and freshly ground black pepper
1 cup all-purpose flour
2 eggs, beaten
1 cup panko crumbs
Parsley, for garnish

Peanut oil, for frying

Directions:
Add the eggs to a large saucepan filled with cold water. Bring to a boil. Remove from heat and let sit in the water for 14 minutes.
Peel the eggs and slice lengthwise. Remove the yolks to a bowl. Add the mayonnaise, Dijon, lemon zest, chives, hot sauce and salt and pepper. Mash the yolks together with a wooden spoon. Taste and adjust seasonings, if needed. Fill the egg yolk mixture into the egg whites.
Heat oil in a deep-fryer to 350 degrees F.
In a medium bowl, add 1 cup of flour and season with salt and pepper. In another bowl, beat the eggs, in a third bowl, add 1 cup of panko.
Dip the eggs into the flour, then the egg and finally into the panko. Gently put the eggs into the hot oil. Fry until golden brown. Remove to a paper towel lined sheet tray. Season with salt and pepper and garnish with parsley.

Pondering The Essence Of Friendship

Today was a day off from both my jobs. A much needed

day of rest. It was a day of wearing a flannel nightgown.

I emailed friends that I hadn't spoken to. Sent out a few "thinking of you cards". Watched "Law and Order". Talked on the phone.

Looked at old and new photos.

I thought a lot about the relationship of girlfriends ...

a very serious subject and I smiled.

My friend Beth and I grew up in the same home town before kindergarten

and have stayed in touch through the years - we each have 2 kids.

Many moons ago she moved to Florida. Miles don't matter.

I see friendships that amaze me. They bring me such joy.

I have younger cousins that are so close they have been like sisters

since birth. They skype, they sleep over, they text...

it is a sight to see. My cousin Linda has always been my sister - we simply mesh, crack each other up

and are as different as night and day in many ways.

We're first cousins.

She has clued me in to what a strong woman

I am and that the Mondelli woman are survivors.

By listening, laughing, sharing and

most of all being a living example.

Woman have the talent of picking up where they left off.

Be it a move, a busy family life, life crisis, health concerns,

career pulls, divorce - we're just there for each other aren't we?

There for each other.

And if you're especially blessed, as I have been -

you have a best friend like I do. Pauline and I have been friends since

1st Grade.

YUP.

We grew up together in NJ. Went through homework sharing, bikinis,

swimming, boys, the Rolling Stones, concerts,

Cat Stevens, the Hippie era, high school, first cars, first jobs,

first kids, long hair, short hair, car pools, Tupperware,

Pampered Chef, craft business, summer cookouts, back yard sun bathing,

Jersey shore, teenagers, my first husband, parents aging, surgeries,

wine tasting, our children's weddings, my cancer, her move, my move....

You Get It!

So today I was thinking

about girlfriends....

how we can talk to each

other when our day has been bleak

or when we want to share a joyful moment.

I had a terrifc day off because I thought of all the special

times I've shared and witnessed with the

very special women in my world.

Savoring A Day....

On a crisp Autumn day, it's not easy to awake. The air is chilled and the covers so very toasty. We snuggle and want to stay spooned under the cotton covers savoring our warmth. Blankets are on, layer upon layer. It's that time of year.

Mornings are such a treasure. We lay side by side and think about the day. The weather has a chill to it. We'll wear sweaters and scarves and jeans instead of summer clothes. Hot coffee and the scent of cinnamon will fill the kitchen when we finally drag ourselves out of bed. Warm spoonfuls of oatmeal, honey wheat toast with creamy butter. How lucky we are to have this day.

Warm showers are in order after breakfast and we'll decide how to spend our day. There's a smell in the air of leaves,rotting wood, the last lawns to be mowed.

Cozy can be with anyone you love or care about.

Cozy can be alone. It's about a fall or winter morning or night when you just want to cuddle under the covers. It's the appreciation of warmth and comfort. The enjoyment of being near another human being. Or sleeping in and staying up. Reading when you want to with your favorite blanket surrounding you in this protective case of fiber = your cocoon.

it's "I want to be left alone."
But on that day set aside for you and me - I want to enjoy every cuddle, hear your heart beat, feel you near me. I want to give you my warmth and savor our closeness. Oh, to wake with someone you love ...what will we do my love?

Ingredients:
3/4 cup Ocean Spray® Whole Berry Cranberry Sauce
1 teaspoon lemon juice
1/2 teaspoon finely shredded lemon peel
24 (3 1/4 x 3 1/4-inch) wonton wrappers
1 (8-ounce) brie round
Directions:
Place 3/4 cup Ocean Spray® Whole Berry Cranberry Sauce in a 1 1/2-quart saucepan. Cook over medium heat until hot, stirring occasionally. Remove from heat; stir in lemon juice and lemon peel.

Meanwhile, heat oven to 350°F. Spray 24 miniature muffin cups with nonstick cooking spray. Press 1 wonton wrapper gently into each sprayed cup, allowing ends to extend above cups. Spray edges of wonton wrappers with nonstick cooking spray. Bake for 12 to 14 minutes or until bottoms of cups are beginning to brown; remove from oven.
If desired, remove rind from brie. Cut brie into 24 cubes, about 3/4-inch each. Place 1 cube in each cup; place sheet of aluminum foil over each pan to prevent excessive browning. Return to oven. Bake 3 to 5 minutes longer or until brie is soft. Remove from oven; top each with about 1 teaspoon cranberry mixture.

Makes 24 appetizers.

Queen For A Day and A Dream

Just imagine if you were a queen or a princess

for 1 day.

If you didn't have to be concerned about the economy. Or just stuff!

I was pondering the idea of my being a queen for just one day

and letting go of a little stress. It was a lot of fun to think about

the riches that could be in my life, not that I really want for huge treasures.

I'm not into cleaning a big house. I love the feel of a cottage home. I'm not up to a giant garden anymore but I can travel and visit gorgeous formal gardens right within

the Washington DC and Maryland area.

But I used my imagination anyway and it was dreamy and fun!

I'd pick out all kinds of interesting jewelry -

not gaudy stuff - unique artisans and stones I love

like blue topaz and peridot - lots of silver

I'd have a garden....

or two

A place by the the beach

and it doesn't have to be big or fancy

And I'd pamper myself ....

tea parties and treats with friends

plenty of pampering

I'd fly away to some secret and
exotic location.... my girlfriends in tow...

and pamper some more!

Grilled Bacon Jalapeno Wraps

Ingredients: 6 fresh jalapeno peppers, halved lengthwise and seeded 1 (8 ounce) package cream cheese 12 slices bacon

Directions: Preheat an outdoor grill for high heat.
Spread cream cheese to fill jalapeno halves. Wrap with bacon. Secure with a toothpick.

Place on the grill, and cook until bacon is crispy.

Mushrooms By: Hidden Valley® Ranch

"Creamy Garlic Ranch dressing brings new flavor to the classic stuffed mushroom."
Ingredients: 2 cups unseasoned small croutons 3/4 cup hot water 1/2 cup Hidden Valley® Garlic Ranch Dressing 30 medium (3-inch diameter) fresh mushrooms 3 tablespoons butter 1/3 cup chopped green pepper 1/3 cup chopped red pepper 3 tablespoons chopped green onions 1 large clove garlic, crushed
Directions: Combine croutons and hot water in medium bowl; cover. Let stand 5 minutes. Stir in Hidden Valley Garlic Ranch Dressing; set aside.
Remove stems from mushroom caps; chop stems. Cook and stir mushroom caps in butter in large skillet until lightly browned and tender. Arrange caps in shallow baking dish.
Add 1/2 cup mushroom stems, peppers, onions and garlic to skillet. Cook and stir 3 to 4 minutes, or until tender. Stir vegetables into crouton mixture. Spoon mixture into mushroom caps.
Broil 6 to 7 inches from heat source for 7 to 9 minutes, or until lightly browned and heated through.

So here's my plan... my birthday was yesterday and I felt loved and laughter. Being an only child, birthdays were rather uncelebrated when I was growing up. I'm a partier. I love fuss and fling. But I have also had many changes during this year of growing, ups and downs, spiritual newness. I spent the morning having blood work, a mammogram and an mri of my lt. knee. Returned to the radiology group 15 minutes later because they had done my RIGHT knee. I treated myself to breakfast out while I read my Kindle. I spoke with friends and family via texts and cell phone calls. Two friends made Beef Burgundy, Caesar Salad, Warm Crab Dip with Baguette and an Eclair Cake for my "birthday dinner" - a special text was read with enthusiasm.

Thank you to my sisters of the heart!

My sons and their loves...are always the very best!

So again... here's the plan... I'm having a girls gathering very soon with treats, wine, fall ambiance,candles lit to offer thanks to the love that is given every day of the year. Oh, and home-made pumpkin breads.

be it books, cookbooks, recipes, costume jewelry, yard sale goodies your not

in love with anymore, videos you want to pass on, writing paper and cards, the sky is the limit.... you can even just gather things for donation!

You cannot wrap up children or husbands - they are too prescious and they tend to jump out of the packages... I've tried. Jenn

Threads Of Life... Sometimes Life Unravels And You Tie It With A Bow!

You know me and my stories, sagas, whatever you want to call them...but I always hope it will inspire someone, I vent, I get this surge of relief, spirit, joy. And I am so very grateful to God and the loving people in my life. The Bloggers "Chatty Crone" & "Pondside" take a moment in their blogging business to make sweet comments when I write something new and I thank you!
Last September I left a very bad situation, a dangerous marriage that was not healthy. It's been a year of growth in so many ways.

I walked away from shattered and right

into to the arms of new hope.

I think about my dogs "Autumn" and "Spice" and my 3 Cats
"Jasmine", "Thomas" and "Elaine" and
I'm more at peace after having to leave them behind.

I visited my my parents in Florida,

visited family everywhere

counted my blessings

swam

swam some more

counted my blessing again

worked as a job coach

made my greeting cards

went to Savannah and my beloved

Jersey shore

saw places and places

reflected

and I can say it's truly been better than I ever expected.

How did I learn this you might ask? I worked with a young lady that has Cerebral Palsy as a Job Coach. She has volunteered at a local hospital making visitor passes for over 13 years, five days a week from 9 am until 2 pm. Everything she does takes effort. She goes through her day having a difficult time walking, talking, swallowing. She sings in a chorus, swims, takes Pilates, exercise class, craft classes and more. She has strength, courage, humor, patience.

I learned from Linda that I have been given such gifts in my life, Linda was a gift God gave me to enable me to see just how very blessed I am. Jennifer

The Path I've Traveled

The path I have traveled, at times seems so long.

I don't know if there are other women

out there that struggle with their

relationships with their fathers.

I have always wanted to write something

about my relationship with my dad.

He's always been there for me. A phone call away.

We rarely talk. There is a distance between us that

others can see and feel. It's been very painful to me.

I know my dad feels deeply.

I'm a "wear my heart on my sleeve"

kind of a woman.

If ever two people could be farther apart in personalities.

Well, that's us.

But on this last visit, as I looked at him and thought about our

years of distance and difference ....

I saw a man that has always loved me in his own way.

Not MY way, HIS way.

My older son said "Mom, maybe Grandpop

struggles with not being able to show his feelings.

Maybe it's very hard for him."

And I pray and again see God shaking HIS head at me,

"No Jenn, you're not perfect!"

So it HAS to be ok, because it's what it IT is and I love him with all my heart.

He's just a man but he's my dad. MY dad.

So I'm starting a new page in my story.

I'm not standing back. I'm opening my heart and arms.

I'm continuing on my path and allowing myself to finally

love my dad for who he is and letting go of past hurts, wants and wishes...

He's my Dad.

Ingredients: Ice cubes, 1/2 cup rum, 1/2 cup coconut cream, 1/4 cup coconut milk, 1/4 cup pineapple chunks, Sliced pineapple for garnish, optional Maraschino cherry for garnish, option

Directions: Fill blender halfway with ice cubes. Add rum, coconut cream, coconut milk and pineapple chunks. Puree.

Serve, garnished with a slice of pineapple and maraschino cherry, if desired.

Ice Cream Sandwich Cake

YIELD: Makes 6 servings

Ingredients: 1 cup heavy cream 2 tablespoons confectioners' sugar 6 ice cream sandwiches (3.5 ounces each) 2 1.5-ounce candy bars or 1/2 cup chocolate chips, chopped

Line an 8 1/2-by-4 1/2-inch loaf pan with a piece of wax paper or parchment, allowing the paper to hang over both long sides.

In a large bowl, beat the cream and sugar until stiff peaks form.

In the bottom of the pan, arrange 3 of the sandwiches in a single layer, cutting them to fit as necessary. Spread with half the whipped cream. Repeat with the remaining sandwiches and whipped cream.

Sprinkle the top of the cake with the chopped candy bar. Cover with plastic wrap and freeze until firm, at least 1 hour and up to 1 week.

Holding both sides of the paper overhang, lift the cake out of the pan and transfer to a platter. Discard the paper, slice the cake, and serve.

Hot Fun In The Summer Time!

Easy Red Pepper Dip
Ingredients:
1 cup pomegranate juice
1 package whole-wheat pitas, 1 pita torn into 1-inch pieces
1/2 cup walnuts, toasted
3/4 teaspoon paprika
1/2 teaspoon ground cumin
1/2 teaspoon cayenne pepper
1 jar (16 ounces) roasted red peppers, drained, rinsed, and roughly chopped
1 teaspoon fresh lemon juice
1/2 cup extra-virgin olive oil
Coarse salt
Directions:
1.In a medium skillet, simmer pomegranate juice over medium-high until thick, syrupy, and beginning to brown slightly around edges, 13 minutes (you should have about 2 tablespoons syrup).

2.Meanwhile, in a food processor, process torn pita until coarse crumbs form. Add walnuts, paprika, cumin, and cayenne and process until finely chopped. Add peppers, lemon juice, and syrup and process until mixture is a smooth paste. With machine running, slowly pour oil through feed tube and process until combined. Season with salt and serve with remaining pitas, toasted and cut into wedges.

2 tablespoons lemon zest

Juice of 1 to 2 lemons (1/4 cup or so)

1 tablespoon table salt

2 cups grape tomatoes, halved

1/2 cup chopped fresh herbs such as basil, parsley, and mint

1/4 teaspoon coarse salt

1/8 teaspoon freshly ground pepper

Instructions:
Bring a large pot of water to a boil for the pasta. Meanwhile, in a large skillet over medium-high heat, toast the pine nuts, stirring often, until they are golden brown, about 3 to 5 minutes. Then transfer them to a bowl.
Reduce the heat under the skillet to medium and pour in the olive oil. Add the garlic and stir it often, until it softens and becomes fragrant, about 45 to 60 seconds. Remove the skillet from the heat and add the lemon zest and juice. Set the pan aside.
When the water boils, season it with 1 tablespoon of salt and bring it back to a rolling boil. Add the pasta and cook it al dente (for about 4 to 5 minutes or as the package instructs).
Spoon 2 tablespoons of water from the cooking pot into a small bowl and set it aside. Then drain the pasta well. Return the pasta to the pot. Pour the reserved cooking water and the lemon juice mixture over the pasta and toss it well. Add the tomatoes, herbs, and pine nuts.
Season the mixture with the salt and pepper. Serve warm or at room temperature. Makes 6 servings.

well the school year was smooth

my second job, I love

the 12 and 14 hr days - the 65 + hour weeks

knocked me on my butt

but it paid the bills

and the sheer variety of them! when i went to italy i was in awe. but today i started to think about how many i've seen in the u.s.. so i started to cruise the net and discovered the beauty both here and around the world of fountains....enjoy, i did!

HELP!

I'm just wondering if anyone else is having issues posting comments on blogs and having it bounce you back and forth? OR... are your followers not showing your on your blog?

HELP! I have been having these problems and have written in on trouble shooting, made comments - I can't seem to get an answer or resolve it! Can someone give me any advice on what to do....I'm not even sure if I'm getting comments anymore???? Thanks, Jennifer

Banana Kiwi Smoothie

Ingredients:

1 ½ frozen bananas
1 kiwi
½ cup vanilla yogurt
Splash of milk
Drizzle of honey
How to make it:

Blend and serve.
Garnish with a clementine or orange slice.

there's one idea! I love fruit. I shop in Asian markets. I try new things.
have you sampled Dragon Fruit yet? it's colorful and delicious.

sort of like a kiwi with bits of teeny edible seeds. I'm big on smoothies too.
I can make them for an on the go breakfast, lunch or dinner.
with the nice weather here - check out what's available near you - local markets, Amish markets have some cool things - if you have an Asian market they can have fantastic buys ( limes 10 for $1, Fuji apples .69/lb )

TWISTED! Any Which Way But Loose!

when i was little my mom would braid my hair into braided heidi like buns on either side of my head, or just braids, a pony tail, a twist, there were bangs, 100 brush strokes a night, many a struggle between mother and daughter, razor like rat tail combs parting the lines between my scalp....uggghhhh

i liked having long hair but i didn't like to do's... i just wanted it to be long... no do's! when i look back at my first grade photo, i laugh at all the toothless freckled funny faces. but no one has a hair do like princess leia of star wars! NO ONE!

the arguments ended long ago - i've had short hair since 8th grade - simple - easy and me - 2 sons so no little girl fun of barrettes, braids, pony tails, puffs, poofs - but now i love the looks. maybe on a granddaughter one day ..i'll be gentle. jennifer

oh happy day!

today and even yesterday were just super,

duper days! i laughed a lot. had fun with friends. the students were testing so the health room was very slow. i caught up on paperwork. worked on a new greeting card line i just designed and have sold quite a few.

i just feel filled with happiness.

i was riding in my car after work yesterday and having my

conversation with God.

the sun had just come out and i was saying

"thank you":

for the beautiful weather
for the huge smiles i kept having
students that had come into my life
new friends
summer trying to peek in
flowers popping everywhere
health
blogging buddies
art
music

I know I talk about happiness a lot. But I praise God in doing it. It's this burst I get - this pleasurable feel of gifts of feelings. I know it's His grace. So I turned the tunes up in my car and danced as much as was legal in my car... and kept the conversation going. I don't ever want to stop being grateful. I also hope it doesn't bore you. Just me being me.
